THE ART OF WOOD-ROASTED COFFEE |
|
The roasting of the coffee is the most significant phase of the process and it still uses the ancient techniques of cooking on a low flame using only oak wood chips.
The oak wood is crucial to the preparation of our various blends as this may alter the moisture in the finished product. Weather conditions also affect the quality of the coffee hence different roasting techniques are used depending upon the season. Only a precise combination between roasting the coffee beans and the external climate will ensure that we produce a consistent product, retaining all of its characteristics . All of this is done strictly by hand.
Once roasted, the coffee is left to rest for 48 hours. At the end of this period, the coffee beans are mixed to create the various Carbonelli Coffees.
